    • Let the eggplants cool for 10 minutes, then slice open and scoop out the flesh into a colander.

    • Allow excess liquid to drain for 5 minutes (this prevents a watery dip).

  1. Blend the Dip:
    • In a food processor, combine eggplant flesh, tahini, garlic, lemon juice, olive oil, cumin, smoked paprika, and salt.

    • Pulse until smooth (or leave slightly chunky if preferred).
