Activate Yeast:
Dissolve sugar in lukewarm water. Sprinkle yeast over it, stir, and let sit 5-10 mins until frothy.

Make Dough:
In a bowl, mix flour and salt. Pour in yeast mixture and olive oil. Knead 8-10 mins until smooth.

First Rise:
Place dough in an oiled bowl, cover with a damp cloth, and rest in a warm spot for 1 hour (until doubled).

Shape Rings:
Punch down dough. Divide into 8 balls. Roll each into 12-inch (30cm) ropes, form rings, and seal ends.

Second Rise:
Arrange rings on a parchment-lined tray. Cover and rest 30 mins.

Coat with Sesame:
Brush rings with water-flour paste. Generously coat with sesame seeds.

Bake:
Preheat oven to 200°C (390°F). Bake 15-20 mins until golden. Cool on a wire rack.
